How to cook sweet potatoes for a healthy weekend breakfast
Sweet potatoes are such an amazing ingredient. Nutritionally they are powerhouses and taste-wise they are so incredibly delicious that I try and eat them three to four times a week. Today I’ve made really simple hash browns out of sweet potatoes. The cumin in the patties matches so well with the earthiness of the sweet potatoes and onions. These are perfect eaten in the traditional way with eggs, or they also make a great addition to the top of a green salad.
Sweet potato hash browns
These are super easy to mix up, then you just leave them on the stovetop for 15 min a side. Timing wise, I usually start making these first thing on a Sunday, and get the cooking going before moving on to make tea/coffee, eggs, and the rest of the meal.
These beauties are full of Vitamins A and E for amazing skin, along with potassium (more than bananas!), copper for healthy muscles and taut skin, as well as the heart friendly phytonutrient quercetin.

How to cook sweet potatoes for a healthy weekend breakfast
Ingredients
- 1 large sweet potato or 2 small, grated
- 1 white onion grated and squeezed
- 2 cloves garlic minced
- 1 Tbsp ground cumin
- 1 egg or chia egg: 1 Tbsp chia seeds to 4 Tbsp water and then let sit for 10 mins

Preheat frying pan on med-low heat

On a grater or mandoline (I use the finer shredder on my mandoline), grate the onion and sweet potato. Add the sweet potato to a bowl. Give the grated onion a squeeze to remove the water before adding it to the bowl.

Mince the garlic and then add everything else into the bowl and mix thoroughly.

Melt grass-fed butter or coconut oil in the frypan and then cook the patties on each side for 15 minutes or until edges are brown and you can easily flip them.
Serve the hash browns with eggs and avocado as in the picture above, or you can eat them as a side dish with dinner. There are loads of inventive ways to enjoy these crunchy bites of savoury yumminess!
