Today is less about cooking, and more about snacking.

Oatcakes could just be your new BFFs, but wait! Just be clear. Oatcakes taste AWFUL on their own. Do not under any circumstances eat these on their own (unless you have been kidnapped and all you see within reach are a pack of oatcakes). They are not Cheese-its, or Doritos, or anything that you scoff down by the 100’s. These are less snack, and more, well…. carrying vessel! So why the heck have I dedicated an entire post to them?

As a carrying vessel, oatcakes are superheroes! Amazing! And, surprisingly tasty! Just like some people, they need to find good friends in order to bring out their wonderful personalities!

In an odd alchemistic way, when you marry oatcakes with topping, they turn into flavourful bundles of snacking joy.

Ingredients

  • Oatcakes


Yoghurt Sauce

  • 1/2 cup thick greek yogurt
  • 1 clove finely chopped garlic
  • 1 tsp turmeric powder
  • salt to taste

Instructions

  1. Get out 8 oatcakes (I use Nairn's Scottish Oatcakes) and lay them out on a large plate. (Make sure the oatcakes contain all oatmeal, and NO wheat (some brands are not 100% oatmeal. Seeds are fine, but make sure there is no wheat.)
  2. Blend together a sauce that you can use to "stick" your ingredients to your oatcake. There are many options, but I like some variate of savoury spice in a yogurt base. Try mixing this up into a Quick Turmeric Yoghurt Sauce
  3. Now add toppings to your oatcakes! There are hundreds of options! Two of my favourites are:
  4. Option 1: Put a dollop of turmeric sauce on your oatcake. Then cut up an avocado into 8-10 slices. Put 2 slices on top of the sauce. Add S & P . Voila - instant tasty treat!
  5. OR, Option 2: Put a dollop of turmeric sauce on the oatcake. Now stick a few rocket (arugula) leaves into the topping, place a slice of hard boiled egg on top of the rocket and then add a sliver of red pepper. Add S & P. It looks hot, and tastes great!

There are so many ways to use oatcakes. They work with savoury or sweet toppings. They are great carrying vessels, help with weight loss, and they look damn fine with toppings on them!
