It’s Day 2 of Oat Week at The Curious Giraffe!

I am a sucker for pancakes. I think it’s because they drop me right into “weekend mode”. But the regular wheat-y kind give me a sugar low about 20 minutes after eating them, and all I want to do is take a nap on the couch! So much for Saturday afternoon!

These oatmeal pancakes taste better to me than the original (egads, is it possible?) They are full of heart friendly goodness as well as being secret-weight-loss-flatbreads-of-power! The supah-best thing about them is they give you lots of zing and spring which means you’re full of energy to have fun filled Saturday adventures instead of Saturday snoozes. Saturday breakfast will never be the same again!

Ingredients

Dry

  • 2 cups dry rolled oats I use Flavahan's Irish Organic Porridge Oats. If you're gluten sensitive you may want to try Bob's Red Mill:
    Gluten Free Rolled Oats just to be extra certain they are indeed gluten free and not factory contaminated!
  • 1 Tbsp ground flaxseed
  • 1 Tbsp cinnamon
  • 1/4 tsp grated nutmeg just a pinch - I just grate a few lashings into the blender
  • 1 tsp baking soda


Wet

  • 1 tsp apple cider vinegar
  • 1 banana
  • 1 egg
  • 1 1/4 cups almond milk I use EcoMill Almond Milk
  • 2 Tbsp coconut oil melted is best
  • 1 tsp vanilla extract

Instructions

  1. Throw, chuck, or jettison all the ingredients into your blender and blend for a mere 30 seconds
  2. Cook your pancakes on a medium hot pan - I use this crepe pan for easy flipping and perfect size
  3. Enjoy! I have 2 suggested toppings below. My fav is number 1, but it's nice to shake it up, you know?
  4. Option 1: Add a dollop of a heart healthy fat like coconut butter or grass-fed butter, then squirt on some agave syrup and a spritz of lemon juice. Heaven!
  5. Option 2: For chocolate lovers! Spread coconut butter on your hot pancakes. In a tiny bowl, mix up agave syrup with raw cocoa powder (1 Tbsp or so), then drizzle this onto pancakes. Then top off with a sprinkle of dessicated coconut and a few slices of banana! You can find these, and other heart-friendly ingredients on my cholesterol busting shopping list!
